The story goes that a priest received a generous gift of chestnuts, but on his way home he stumbled into a river, bringing all the chestnuts in with him. Of course, he didn't want them to go to waste, and so when he reached his destination, he put the chestnuts in the oven to dry, unknowingly creating a mouth-watering recipe. The colour is generally reddish, with violet hues depending on the colour of the mulberries themselves and their degree of ripeness. The resulting sweet yet sour sorbet is deliciously moreish.

Ice cream paste made with “Wonderful Pomegranates from the Marsala area” (TP). This round and delicious fruit grows from eye-catching red flowers with orange hues. The pomegranate fruit is a berry containing fleshy, prism-shaped arils that are very juicy and have an unmistakable flavour. A true gift of nature, vast expanses of pomegranate plants extend as far as the eye can see in the Marsala area, amidst the breath-taking landscapes of Sicily. Given the high levels of vitamins K and C, polyphenols and punic acid within this fruit, which are considered to help prevent cancer, we decided to create a paste that would enhance its flavour without losing its beneficial properties. The ice cream will be coloured with a striking cascade of ruby red arils.

Jewish tradition refers to the cedar as the fruit of the most beautiful, fragrant tree. It is eternal because throughout the year it never drops its branches. Its skin is very thick and at full maturity has a delicate green and yellow pastel colour. Generally, people use only the essential oil, but we at Città del Gelato have pulled out all the stops and made our ice cream paste from a cedar jam so this special fruit can be enjoyed to the full. The peel will give your ice cream an interesting twist, a unique and original colour, and a very aromatic flavour with a bitter aftertaste.

Ice cream paste made with “PDO Etna Prickly Pears” (CT). Mount Etna is a UNESCO World Heritage Site and PDO Etna Prickly Pears are grown on its northern slope. We have carefully selected the Sangugna, Muscaredda and Sciannina varieties to make a mouth-watering paste for ice cream and granitas. The special feature of this ancient cultivar is the variety of colours that its fruit can take on and the different aromatic notes, which are quite distinct. Our ice cream will have a soft colour, enhanced by small, nutty seeds typically found in the fruit. The fruit has an aroma reminiscent of Sicilian summer nights and contains good amounts of vitamins A and C, calcium and potassium. "It is made like the Sicilian people, who on the surface seem very distant, but if you can reach their heart you will see how much love they have to offer”.

New Zealand missionaries were the first to discover this distinctive fruit, naming it Kiwi after the bird that symbolised their homeland. The plant was introduced to Italy in the 1970s and its cultivation soon became widespread, making Italy the world's leading producer of kiwi fruit, particularly in Lazio. From this fruit, Città del Gelato has created an ice cream paste with an intense green colour and a sweet taste balanced by a slightly sour tang. The ice cream will be flecked with the seeds contained within the fruit, which are rich in vitamin C.

In fact, the hills and plains surrounding Etna's volcanic relief have specialised in a number of very specific cultivars that produce oranges with a thin skin and deep red flesh. Legend has it that the intense colour of the red orange from Sicily originates from Etna's incandescent lava flows, while its sweet flavour is the result of the Sicilian farmers' love for the land. The varieties of the Sicilian red orange are: Tarocco, Moro and Sanguinello; this well-balanced combination creates a sweet and fragrant ice cream paste reminiscent of Sicilian citrus groves. Ideal for granitas and sorbets, this paste will amaze you not only with its intense flavour but also with its striking natural colour.
